Grand Marnier-Infused Strawberry topping recipe by The Culinary Institute of America

  • 2 cups sugar
  • 1 3/4 cups Grand Marnier
  • 6 cups hulled and quartered strawberries

  1. Mix together the sugar and 1 1/4 cups Grand Marnier, then add the strawberries and stir together. Cover the strawberries and refrigerate overnight. The strawberries will be submerged in liquid when they are properly macerated.
  2. Using a slotted spoon, transfer the strawberries from the liquid to a separate bowl and set aside. Pour the liquid into a saucepan and bring to a boil. Reduce the heat and simmer slowly until reduced to a syrupy consistency, about 30 minutes. It may be necessary to reduce the heat while the liquid is reducing.
  3. Cool the syrup to room temperature and add the remaining 1/2 Grand Marnier. Pour this syrup over the reserved strawberries.
  4. The strawberries are ready to serve now, or they can be stored in a covered container in the refrigerator for up to 5 days.
