CIA's Hummus recipe

Makes 2 cups hummus

  • 1/3 cup tahini
  • 2 cups cooked chickpeas, drained and rinsed
  • 3 tbsp fresh lemon juice, plus more as needed
  • 1 tbsp minced garlic
  • 1 tsp kosher salt, plus more as needed
  • 1/4 tsp cayenne pepper, plus more as needed

  1. Combine all of the ingredients in the Vitamix container and blend, using tamper, to a smooth paste.
  2. Adjust the consistency with a little water, if necessary; the hummus should be light and creamy.
  3. Taste and adjust the seasoning with additional lemon juice, salt, and cayenne, as needed.
  4. The hummus is ready to serve now, or it can be stored in a covered container in the refrigerator for up to 4 days.
