Marinated Tomato Petals

Use this recipe with Pangea's Vegetarian Sushi Roll recipe.

Chef’s note: If you don’t have a Cryovac bag, a freezer-strength zip bag with all of the air pressed out to form a vacuum will suffice.

Makes 2 portions

  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon rice wine vinegar
  • 2 tomatoes, blanched, peeled, seeded, and each cut into 3 petals (6 total)
  • 1 Cryovac/freezer zip bag


  1. In a Cryovac bag, add the soy sauce, mirin, and rice vinegar.
  2. Add the tomato “petals” and mix the tomatoes with the liquid mixture.
  3. Vacuum seal the tomatoes. Leave the tomatoes in the refrigerator for a few days for flavors to absorb and develop.
