Parsnip Rice

Makes 2 portions

  • 1 parsnip
  • 1 teaspoon pine nuts (toasted)
  • 1 teaspoon Rice Seasoning (recipe below)

Rice Seasoning

Makes 4 portions

  • 1 1/2 ounces rice vinegar
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1-inch piece of kombu


  1. With the appropriate attachment, grate the parsnip in a food processor. Place grated parsnip into a bowl.
  2. Toast the pine nuts until they are golden brown, then process in a food processor until a paste forms. Add the pine nuts and Rice Seasoning to bowl with parsnips and mix to combine.

Rice Seasoning

  1. Combine all ingredients in a pot and bring it to simmer until the sugar and salt dissolve. Remove the kombu.
