Puffed Wild Rice

Makes 4 portions

  • Vegetable oil, for frying, as needed
  • 1 ounce wild rice, boiled until tender, drained


  1. Cut the cucumber and remove the seeds.
  2. In a small pot, heat oil over medium to high heat.
  3. Add the cooked rice and fry until puffed.
  4. Remove the puffed rice with a small strainer and drain thoroughly on paper towel. Reserve for garnish.
